Buckets and covers for standing chambers. Standing chambers are commonly used in bakery automatic production lines for dough pieces rest or pre-fermentation.
After division and before molding/forming, the dough pieces are placed in buckets and move slowly to the exit, thus striking the exact resting time before going on with the bakery process.
In the case of the bakery industry, this moment of rest fosters the dough pieces molding by the dough forming belts. With respect to the pastry, it enables not to work too much the dough during the laminating process.
Custom-tailor. Can be made of grid, tweed (wool) or polyester filter, in any shape or size.
To upgrade sanitation and eliminate the possibility of a product contamination by a part of the buckets, our equipments for standing chambers are metal free and contains no collapsible pieces.
In this context, Cloquer developed an unprecedented fastening system composed of a strong Velcro closed behind the cover and never in contact with the dough pieces.
