Properties and advantages
It is no coincidence if baker’s couche are made out of natural linen.
Thanks to its technical specifications, linen plays a prominent role in the success of the fermentation process: it allows the dough to breathe and add quite a bit to the final product.
Maintenance and washing
When your linen cloth becomes clogged, it loses progressively its technical properties. The weft loosens and a grayish-black mold appears. A few simple acts can help prevent these nuisances: let it dry completely and systematically after each use in a well-ventilated room, dust it off and store it wounded in a dry and fresh place. Above all only scrape it with a suitable tool.
Washing your linen canvas is becoming urgent when black little grains, amalgam of moldy flour, appear on the cloth. A few solutions exists to deep-cleanse these residues without impairing the linen quality: hand-cleaning with cold or tepid water (hot water may shrink the cloth) and high pressure cleaning, or in a professional laundry, making sure the detergents used are suitable for food contact.
